Spread the love

I LOVE Halloween – not for the scary, spooky side, but for the cute decorations and delicious treats! I saw these cute melted witch brownies on pinterest, and I knew I needed to make them. While I love brownies – I absolutely LOVE cupcakes, so I switched out the brownie for a chocolate chocolate chip cupcake with marshmallow buttercream frosting and green, white chocolate ganache. They may sound difficult – but they were so easy to make. I sent them to my husband’s work, and all his co-workers gave them FIVE STARS. They would be perfect for your next Halloween party!

    • 3 eggs
    • 1/2 cup oil
    • 3/4 cup milk
    • 1/2 cup sour cream
    • 2 teaspoons vanilla extract
    • 1 (15.25 oz) chocolate cake mix
    • 1 cup chocolate chips
    • 2 cups butter, softened
    • 2 1/2 cups confectioners sugar
    • 1 teaspoon vanilla extract
    • 2 (7 oz) jars marshmallow creme
Green Ganache:
    • 8 oz white baking chocolate
    • 1/2 cup heavy cream
    • green food coloring
Witch legs:
  • 12 striped paper straws, cut in half
  • witch boots (black cardstock, cut into the shape of a witch “boot”)

    1. Preheat oven to 350 degrees and line pans with cupcake liners.
    2. In a large bowl, add the eggs, oil, milk, sour cream, and vanilla extract and mix until thoroughly combined.
    3. Add in the cake mix and stir until smooth. Fold in chocolate chips.
    4. Fill cupcake liners about 3/4 of the way full, then bake for 18-22 minutes until a toothpick inserted comes out clean.
    1. Whip the butter on medium-high for a good 4-5 minutes, stopping to scrape the bowl once or twice.
    2. Reduce the speed to low, and slowly add the powdered sugar. You can add more or less powdered sugar depending on how thick you want your icing.
    3. Once the powdered sugar is all incorporated, add in vanilla extract and marshmallow creme.
    4. Pipe frosting onto each cupcake.
  1. Break the white chocolate into small pieces and place in a heat-resistant bowl.
  2. In a small saucepan, heat the heavy cream until just boiling, then remove from heat and pour over white chocolate.
  3. Mix thoroughly until white chocolate is completely melted.
  4. Add green food coloring, 1-2 drops at a time, until the white chocolate reaches your desired coloring.
  5. Drizzle ganache over frosting.
  6. Glue witch boots to the straw halves, and stick two legs into each cupcake with the boots facing out.
