Hi friends! Today I’m excited to not only bring you a delicious and Tortellini Pasta Salad recipe, but remember, each month on the 12th, 11 of my bloggy friends and I are bringing you a delicious and easy recipe, with a theme! And the theme this month is 12 Summer Salad Recipes!

I am not a huge fan of creating classic salads at home. I think it’s the “dressing” issue. There aren’t many bottle dressings that I enjoy, I really need to get on board with creating my own! Are there any favorite recipes you enjoy? Anyhoo, I digress. So for this month I decided to recreate a Tortellini Pasta Salad recipe that my friend Kristi brings over for each get together. She snagged it from Pinterest years ago, and it’s a classic party fave!

It is SUCH a party fave that my family was so excited when I made it! I mean – pasta salad by any measure is good, but THIS pasta salad definitely kicks it up a knotch with a flavor combination you’re sure to love! Simply toss cooked cheese tortellini in with fresh spinach, diced salami, cherry tomatoes, sliced olives, fresh parmesan and toss together with your favorite Italian dressing! We used Paul Newman’s Olive Oil and Vinegar dressing and it was DELISH!
